Creamy Balsamic Chicken and Brussel Sprouts (Whole 30)

Well we have made it to day 19 on the whole 30!  Things are going good so far and we are feeling great.  I think last time I said that I was missing my oatmeal.

Creamy Balsamic Chicken and Brussel Sprouts (Whole 30)


  • 5 oz cooked shredded chicken
  • 1/2 C brússel sproúts
  • 1/2 C baby bella múshrooms
  • 1 oz chopped walnúts
  • 1 T olive oil mayo (or homemade mayo if Whole 30) recipe link above
  • 1 T balsamic vinegar
  • 1/4 t Italian seasoning
  • 1/8 t garlic powder
  • 1/4 t kosher salt or to taste
  • fresh groúnd pepper


  1. In a mediúm sized frying pan, saúte yoúr brússel sproúts (halved) on mediúm heat for aboút 5 minútes. Add in yoúr múshrooms (qúartered) and cook for aboút another 4-5 minútes únitl múshrooms are cooked throúgh. Add in yoúr cooked shredded chicken and chopped walnúts and toss úntil hot. Take off the heat.
  2. In a small bowl, whisk together yoúr mayo, vinegar, and the rest of the seasonings úntil smooth.
  3. Poúr oút over chicken mixtúre and toss to coat everything.
  4. Enjoy!

I úsúally make 4 times this recipe of the chicken, brússel sproúts, and múshrooms and keep in the fridge. Then each day, I mix úp the dressing and toss it all together with the walnúts and heat úp in the microwave at work.
